Mincemeat cake



12 oz Mincemeat

4 oz Soft dark brown sugar
 
A little milk if necessary

7 oz self raising flour

3oz margarine

2 large eggs

1oz lard

Method:


1. Grease 7" tin and line with greased grease-proof paper. Heat oven Gas 3 or 325º F or 160º C or 140º C fan.


2. Cream fat and sugar and beat in eggs.


3. Stir in mincemeat and fold in flour. Mixture should be moist. If necessary add little milk.


4. Bake at Gas 3, for 10 mins. Turn to Gas 2, 300º F or 150º C or 130ºC fan for about 1¼ to 1½ hours until cake is firm and shrinking slightly from edge of tin. Keeps well.
